Tragaldabas was born from a passion for quality ingredients, respect for the product, and an honest approach to gastronomy. Since our beginnings in 2019, we have worked with a clear vision: to offer carefully crafted, technically skilled, and accessible cuisine, where flavor always takes center stage and the customer feels right at home.

This project is the culmination of our chef Pablo Romero's professional journey and his unwavering commitment to maintaining a vibrant menu based on seasonal market availability. Each dish reflects his learning, experience, and a clear philosophy: eating well shouldn't be a luxury, but a pleasure accessible to those who appreciate quality.
